Introduction
Flavor is the national food festival of Trivandrum celebrated usually in the second week of April every year. This seven-day-long affair beckons chefs from all over the country to come up with their stalls and represent their states. Renowned hotels from across Kerala too participate in this weeklong international festival of exotic cuisine. It is a great opportunity to sample authentic specialties from the Kerala kitchen as well as from other parts of India. If you are touring Trivandrum at this time of the year, you will be in for a mouthwatering treat at every restaurant and little eatery you visit. Food aficionados, however, make a beeline for the stalls.
Specialized chefs and their staff put up stalls offering the favorite delicacies of their region. To add a touch of authenticity and visual appeal they dress up in the traditional attire of the region they represent. This is one of the greatest exhibitions of food in South India where you can not only sample exotic delicacies from Kashmir to Kanyakumari, but also try out lesser known cuisine. The festival has an obvious bias for Kerala cuisine, what with the local chefs rustling up a sumptuous array of traditional Kerala cuisine garnished with freshly ground coconuts. Indeed, a wonderful opportunity to interact with the chefs, find out more about various regional cuisine, how they are cooked, and everything about flavoring and the skilful use of spices. The fair gives you a complete sense of the basis of Indian cuisine.
