When you visit a place for the first time, sampling the local food becomes an integral part of your holiday plans. The coastal state of Odisha is renowned for its flavoursome cuisine, and Bhubaneswar, the state capital, is the best place to sample it. Odiya cuisine is considered healthy as it is less oily and spicy. Drawing influences from the food of West Bengal, a neighbouring state, Odiya food uses mustard oil as the primary fat. Though most people of Bhubaneswar are vegetarians, the city has numerous places for non-vegetarians as well. Keep reading for an insight into the popular Odiya dishes that you must have when in the city.

Odisha’s Seafood Wealth

As the state is lined by the ocean, seafood is an important part of the local cuisine. If you like seafood, then you must try Kankada Jhola, a spicy crab curry. During Durga Pooja, a curry, called Macha Ghanta is prepared using fish, gram pulse, potatoes, brinjal and spices. Macher Kalia, cooked with fish and green mango, is another Odiya dish with Bengali origins. Besara is a dish, where fish is cooked with ground mustard seeds. You can also sample Crab Kalia, in which crabs are cooked with potatoes and primarily flavoured with ginger. Odiyas make a rich dish by poaching prawns in coconut milk; it is called Chungdi Malai. Dahi Maacha is known to be one of the most widely eaten seafood preparation in the state. Pieces of fish, infused with mustard seeds, and poached in a yoghurt-based gravy can be hard to resist.

Vegetarians are Welcome Too

If you are looking for vegetarian options, then the state will never disappoint you. The most loved non-meat preparation to try in Bhubaneswar is Dalma, prepared with lentils and vegetables. A vegetarian dish that you must sample in the city is Bhendi Bhaja. It is essentially shallow-fried ladyfingers, stuffed with ginger, spices and garlic. A prominent festive delicacy of Odisha is Ghanta or mixed vegetables in a tangy gravy. Aloo Potol Rossa is a potato curry, infused with cumins, mustard seeds, fennel, fenugreek and kalonji. Saaga Moonga, made with leafy vegetables and lentils, is another healthy vegetarian option.

Rice – An Odiya Staple

Like in most of East India, rice is the staple grain of Odisha that is eaten almost every time of the day. A renowned rice dish of the state is Pakhala Bhata, wherein rice is left to age in water and tempered with ghee, curry leaves, mustard seeds and dried red chillies. Sour yoghurt is added to the tempered rice to give it a creamy texture. An Odiya dish, a version of which you must have had before, is Khichdi. Rice, cooked in ghee and flavoured with cinnamon, is also a popular dish in Bhubaneswar.

Sweets – You can never Have Enough

Odiya cuisine is renowned for its long list of desserts, and Bhubaneswar is the perfect place to have them all. You should definitely try Chhena Poda, also spelt Chenna Podo. It is fresh cottage cheese or chhena, mixed with sugar, resins and spices, and made into cake-like pieces. Chhena Gaja, requiring the same ingredients as Chhena Podo, is another lived Odiya dessert. One more sugary delight, which can be had when in the city with Bhubaneswar packages, is Enduri Pitha. To make it, flattened balls of rice flour are filled with a sweet stuffing, and then the dough pockets are steamed.

Light Bites – Not too Much; Not too Less

One of the most famous snacks to have in Bhubaneswar is Ghuguni, a combination of dahi vadas and curry. Arisa Pitha, made with ghee and rice, is a popular snack with evening tea. Those with a sweet tooth can also try a preparation of semolina balls, stuffed with a sweet mixture, called Manda Pitha.
