Every corner of India boasts a unique cuisine, and Jammu and Kashmir is no exception to this statement. This state is not
only known for its picturesque landscape, but for its mouth-watering dishes as well. The cuisine of Kashmir is not just one,
but a combination of many different styles. Central Asian, Persian and Afghani influences can be clearly seen in the way
locals cook their food.
What better place for you to gorge on some authentic Kashmiri delicacies than the winter capital of the state, Jammu?! While
strolling in the markets in the city, you will come across many decades-old dining venues that still follow the traditional
recipes. Here’s what the Kashmiri cuisine has in store for you.
Since the population of Kashmir is predominantly non-vegetarian, there is a whole gamut of meat-based dishes you can try.
For non-vegetarians, Jammu is nothing short of a heaven, as a variety of meat-based dishes can be had here.
Among the various dishes that are famous in the region is rogan josh, a rich mutton curry. Yakhni is another mutton dish,
wherein the meat is cooked in yoghurt. Matschgand is lamb meatballs served in a spicy, red gravy. Often seen in the
households of Kashmiri pundits, Muji Gaad gives a glimpse into the seafood culture of Jammu. It is prepared by frying
marinated fish once till it is crisp and brown, and then again with radish and spices. Aab gosht has numerous versions, but
in Kashmir it is made with milk, and spices like cardamom and black pepper. You can also try goshtaba or gushtaba, which is
often served during the festive season. It is minced meatballs cooked in flavoursome yoghurt and spices that render a mild
taste to it.
While talking about the cuisine of Kashmir, you cannot miss discussing Wazwan, a 36-course meal usually, served during
weddings and other celebrations. While many restaurants in the area offer a 15-to-20-course Wazwan, there are still numerous
places in Jammu that offer the traditional 36-course feast.
Though most of the dishes in Jammu are made with chicken or lamb, there are many delicacies that vegetarians can enjoy. The
first dish on this list is chamani qaliya, which is made with cheese, milk, cloves, cinnamon, cardamom, cumin seeds and
mustard oil. You can also taste Kashmiri pulao – a rice dish with a lot of dry fruits and nuts. Cinnamon, cloves and bay
leaves provide a mesmerising aroma, colour and taste to this dish. Haak or Kashmiri spinach saag is a tasty and nutritious
dish you can enjoy while on a tour of Jammu. Lyodur Tschaman is cottage cheese, also called paneer in India, cooked in a
turmeric-based gravy. You cannot miss having zafrani pulao, which vegetarians as well as non-vegetarians would
To complete your dish, you need a dessert, and there is a wide variety of sweet dishes in Kashmiri cuisine that you can
choose from. You can try a bowl of Kashmiri phirun or phirni, a creamy dish made from rice, milk, sugar and cream. The
people of Jammu also satiate their sweet tooth with shufta, a traditional dish from the region, loaded with dry fruits. A
dry fruit cake, roath, is also worth a try as are taza meva takrim travith, moanga halwa and simmi halwa.
Like many other things, Kashmiris have given a unique touch to tea, a beverage loved throughout India. A local version of
tea is called noon chai, and at times gulabi tea as well. The beverage derives its pink colour from baking soda, which is
added to the boiling tea before milk. The Kashmiri adaptation of green tea, kahwah, is also worth trying. When the weather
of Jammu gets cooler during the winter season, the locals start having more and more cups of the beverage as it helps tackle
the low temperature.
